6/10/2023 0 Comments Brutal by Uday Satpathy![]() ![]() On the evening Lux was to arrive in Buffalo, I thought this simple and lovely warm meal would be perfect to welcome my jetlagged new room-mate with. Its first fans were my undergraduate classmates who would jump at the sight of my lunch box and cajole me to part with sizeable portions of my fried rice in exchange for their lunch. This one took shape long before my student days in the U.S.….it was actually born out of my very early cooking efforts as a hungry teenager home alone. This dish happens to be one of my all-time favorites: easy to whip up, minimal waiting time, inexpensive ingredients, low on calories and yet high on flavor without any spice. Remove the omelet from pan, garnish with chopped olives and cheese while still hot. Ensure low heat is maintained or you may end up with a burnt omelet. Cover the pan and cook till omelet fluffs up. Add a few drops of oil along the sides of the pan. Reduce flame and pour the beaten eggs over this. ![]() ![]() Mix in the steamed vegetables and sausages and sauté for couple of minutes. Add the mushrooms and pepper and sauté till done. Sauté onions, ginger-garlic paste and turmeric powder in a large non-stick frying pan. Steam potatoes, carrots and beans and keep aside. A delicious healthy omelet great for Sunday brunches!! This recipe is a modified version of the “loaded with love” omelet my dear husband Ashwin makes for me when he is in great spirits. ![]()
